We cook with fire,with smoke, and withtime.

Irori is the sunken hearth at the centre of a Japanese home. Ours is a counter of live charcoal, and everything that reaches your table has passed over it.

The kitchen

Every plateleaves a hand.

No pass, no heat lamps. The chefs work an arm's length from where you sit, and the dish goes straight from the coals to the counter.
